The Perfect Pair - Cider & Food

When I called Olaiya Land and asked her if she had an interest in exploring recipes with cider, there was a long pause, and then she said, “That’s brilliant. I’m in the business of food and I don’t know what to pair with cider.” So began the journey of creating or finding recipes that marry the flavor profiles of our ciders with the ingredients in each recipe. The recipes and images that we post would not happen without the culinary skills of Olaiya Land, the photographic eye of Rina Jordan or the curiosity of Sharon Campbell whose current life mission is to impress upon everyone that cider is what pairs best with food. As I watched Olaiya put this sandwich together, I had a moment of “I’m not worthy!” It is so elegant. Yes there are many steps, but look at it! I can’t wait for that invitation when someone says, “Can you bring a dish to a picnic?” I am showing up with this roulade – it will be my day in the sun!

I love the irony of this recipe. It is elegant and it is a burger at the same time. You can serve this recipe whenever you are looking for a recipe that will satisfy and surprise at the same time. The relish is perfect with the duck and adds another layer to flavor profile: sweet from the cherries and a crunch from the walnuts.

Our crisp dry Tieton Blend Cider has always paired well with seafood. This easy to prepare crab sandwich served on pretzel bread is the perfect pairing for this cider. Everyone loves crab and making a sandwich with it is such a treat. The salt from the bread marries with the tang of lemon dressing and tarragon; then the velvety softness of the avocado hits your mouth. Yum.

This is the taco for company! I have made this recipe over and over and everyone always loves it. It’s the chipotle sauce that makes it, and really how can you go wrong with salmon. It’s the kind of taco that drips down your arm – you are warned.

I asked friend and Seattle freelance chef Olaiya Land to help me with the creation of several salads to pair with our ciders. She pulled flavor notes from each of our ciders and I pulled recipes that I wanted to reference. When we came together in my kitchen to start creating, we approached each salad, cider and ingredients with what can we add to make this an unexpected recipe. I wanted salads that were simple and came together with ease for the cook at any skill level. Chicken, green beans, corn and tomatoes at the height of summer are my favorite. Potatoes are a must in any recipe where I serve our Apricot Cider. When Olaiya looked at this list of ingredients, she said, “Curry?” We quickly mixed together a dressing with curry, sampled it with the ingredients and a smile appeared on both our faces. We prepared the salad and it was perfect.
